A. The contact and calendar information is saved in Google's cloud.
I'm assuming you used an active Google account on the phone and used Google's apps. The phone contacts and calendar are synced to your Google account, so all you need to do is activate the device and log in with your Google account when you're prompted.
None of that information is saved on the SD card.
You can see all this by logging into your Google account on a computer.
The only thing really saved on the device itself are SMS/MMS text messages and call logs. You have to manually save them with a backup app BEFORE updating or flashing the phone. If you already did the update, then it's too late.

A. TL;DR: You need to download an app or use a preexisting phone program you will find in the security settings.
Long answer: If you want to be able to protect the files from being accessed on the phone, you can use a program as described above. But if you want actual security for the files, a program like those will not work well because someone can very easily use a USB to bypass the phone's operating system or just remove the storage card and pop it into a computer and open them there. For true security you have to have a phone capable of encrypting the files it stores and use an encryption method suitable for how sensitive your documents are.
Because phones available to the public today are not build for being "secure" you would do well not to keep sensitive information on it at all. If someone wants to get the files, they will get them pretty easily no matter what.
